  • 1 pound medium Pan-Seared Citrus Shrimp

  • 8 cups greens such as arugula spinach, or spring mix

  • Fruity or lemon-flavored extra virgin olive oil

  • Juice of 1/2 lemon or 1/2 orange

  • 1 avocado sliced or diced

  • 1 shallot minced

  • 4 ounces toasted sliced almonds

Ingredients:

  • 1/2 pound whole wheat penne pasta

  • 2 medium tomatoes chopped or cut into 1/8ths (about 1 cup)

  • 1/3 cup roasted red and/or yellow bell pepper roughly chopped

  • 1/4 cup sliced kalamata olives sliced in half

  • 1/4 cup olive oil

  • 1/4 cup golden balsamic vinegar

  • 1 1/2 tablespoons balsamic vinegar
